70-80% and a handful of companies doesn’t exactly scream monopoly. Meat packing gains a lot of efficiency when scaled up.

What did those companies do that was illegal? Or we just don’t like them being big? How did they get so big and why can’t the small compete? Do we expect the Walmart, Krogers, Aldi’s, Walmarts of the world to prefer to buy from 100 different packers or 3-4 suppliers?

Illegals need to be dealt with but we also need more workers brought in. Simply eliminating the workforce doesn’t change the economics of what it takes to run large packing houses and process 10k animals a day. Efficiency gains can not be duplicated on a small scale.
